Light Bites

Salmon Salad Rolls with chili maple dip

This is a sushi inspired salad roll with fresh raw salmon and  yummy crunchy veggies. 

Its a makes a great appetizer or even a meal if your wanting something on the lighter side.

 The chili maple sauce really helps livin up the This  wrap and tastes delicious with the salmon. This recipe is filled with ingredients to help support the decreasing of inflammation in the body. 


Yield: 6 rolls                Prep/Cooking: 30 mins 


Ingredients: 

  • 8 rice paper wraps
  • 1 sushi grade wild caught salmon sliced into strips(to fit in rice paper wraps)
  • 1 half cucumber sliced into strips
  • 1 shredded carrot
  • 1 large avocado thinly sliced 
  • 1 cup of fresh bean sprouts
  • 1  and half cup of fresh spinach
  • handful of basil leaves 

For dipping Sauce:

  • half a cup of coconut aminos
  • 1 tablespoon of maple syrup
  • half a teaspoon of sesame oil
  • 1 teaspoon of crushed chili peppers 
  • squeeze of half a lime 
  • salt and pepper to taste 


Method:  

  1. prepare all chopped veg and sliced salmon and have ready
  2. heat about 2 inches of water in a pan and then turn off to cool for a few mins 
  3. add 2 rice papers to water for 30 seconds to a min or until soft 
  4. carefully take out of warm water and smooth out onto a clean surface
  5. start by adding spinach onto rice paper fist then salmon and hand-fulls of the other veg, *make sure not to overstuff so that it can fold easily!!
  6. fold in on bottom and top first and then roll like a burrito, the rice paper should stick together easily 
  7.  Wisk all sauce ingredients together until smooth
  8. Cut in half , dip in sauce and enjoy!!


Notes: 


        You can use 1 rice paper wrap, but I prefer to use 2 together to avoid tearing. I find it much easier to wrap and I am able to fit more veggies in that way! This is a recipe that you can definitely get creative with! I sometimes add things like strawberries, mango, pineapple to give it a more spring twist. You can also switch up the dipping sauce to your liking. There are so many ways to make salad rolls and a creative way to get your raw veggies in.
